GREEN TOFU FILO ROLL

INGREDIENTS:

- 250g firm tofu

- 110ml Pesto

- 50g pinenuts

- 6 sheets of store bought frozen filo pastry

- 200g english spinach/ baby spinach leaves

- salt and pepper to season

- sesame seeds to decorate

- optional: persian fetta or mozzarella cheese


METHOD:

This couldn't be simpler.

Using a pan on a high heat, no oil, add the pine nuts and cook until golden. Keep stirring so they don't burn.

Remove the nuts from the pan, add a splash of olive oil and wilt the spinach.

Crumble the firm tofu into a bowl, add the pesto, spinach, salt and pepper.

Roughly chop the pine nuts and add them in as well.

Lay out 2 sheets of the filo pastry on a flat surface. Spoon a line of the filling along the longer side of the pastry. Gently roll the filling into a sausage shape. Only for the first one, roll the sausage into itself to make a snail shape. Place it on an oven proof dish or tray.

Repeat the sausage making steps, with the remaining pastry and filling, but dot not snail them. Once the sausage shape is formed add it to the initial snail shape one to continue making it bigger.

Once you've used up all the filling, pour a drizzle of olive oil over the top of the scroll and sprinkle over some sesame seeds if you are using them.

Bake at 180C until golden. Enjoy!

Change it Up!

-Tofu: instead use hard boiled eggs, cous cous or more nuts such as almond or walnut.

- Pesto: you can use fresh herbs and a splash of olive oil

- Cheese: you can add any cheese you like to this

- Filling: this is only way to stuff a filo roll; Get creative! Any vegetables with a bit if herbs, nuts and spices would also work!
