Staples galore and making the most from simple or few ingredients.
Ricotta and greens open pie
This was absolutely delicious.
3 green veg (brussels, zucchini, kale)
tofu for protein
ricotta for richness and to bring everything together
garlic for flavour
easy and quick to make pie crust
salt - of course
Mix everything together, pop it in the oven and you get something delicious on its own, wonderfully accompanied by a salad and perfect for sharing.
Left over ravioli
I simply combined leftover ravioli, with leftover ricotta and tofu, boiled some beetroot and sprinkled some oregano and voila! The Italian version of fried rice?

Breakfast for lunch
I planned to have breakfast with a friend, but he postponed to lunch and said “ I love breakfast food for lunch” - this is what I came up with:
home made sourdough rolls
mustard
avocado
2 fried eggs
sprouts
panfried charred cherry tomatoes squished
salt and pepper

Salmon, Spuds and tomato vinaigrette
Panfried fish finished in the oven or simply oven-cooked fish is always my go-to way to cook fish at home.
This week it was a salmon fillet with salt and pepper cocktail potatoes and a fresh tomato, quinoa, spring onion, vinegar, olive oil and salt salad.
Dahl
In my head, there is nothing more nourishing than beans or lentils.
If you haven’t noticed yet, at least once a week, I will cook either of those things; this week, it was lentils.
Flatbread is the easiest bread to make ever-period.
No matter how it turns out, it is always satisfying and takes no time to make.
there are 2 different dalhs I make - the accompanying dahl - lentils with water, salt, and turmeric cooked until soft.
or and actual split pea dahl full of flavour that is a dish on its own.
This week, it was the basic one, and I ate it with nepali style curry made with potatoes I had cooked the day before, frozen cauliflower, ginger garlic paste and fresh tomatoes, cumin and coriander powder.
