Winter hearty meal vibes
Eggplant and Osso Buco Ragu
This was so quick to make.
In the pressure cooker, I simply put:
onion
garlic
osso buco
tomato paste
smoked paprika
bay leaves
covered it in water and let it cook for 40 minutes.
I then opened the pot, added the eggplant, and let it cook for another 10 minutes; then, once everything had melted away and all the flavours combined, I seasoned it with salt and pepper and poured a ladle or two of the sauce over some boiled pasta, sprinkled some mozzarella chunks on top and dug in!

I completely understand why people love instant noodles; they’re essentially the easiest thing to make that is full of flavour and comforting. BUT in my eyes, they’re boring and don’t nourish you at all.
Making a proper bowl of noodles only takes a tiny little bit more effort. In my book complex cooking made simple I go through all the detailed steps and how you can change it up and make different every time but this week this is what I made:
miso, soy sauce, ginger garlic paste broth base
broccolini
spring onion
tofu
home made pickled radishes
home made kimchi
soba noodles
bonito flakes to garnish
Experimental Bread of the Week
I make bread every week, and sometimes I like to change things up. This week, I attempted to make a cardamon orange brioche and it turned out great! I was a bit heavy on the cardamon, but overall, it was a success and it was great to be eating something slightly different than the norm for breakfast.
Tuna steak, scallops, roast veg, olives and bulgur wheat
The title sums it up. I have never tried to make a tuna steak before, but it was finally available for sale where I get my fish and I couldn’t resist giving it a go. My only regret is rushing the cooking process and not making it a learning experience….
Now I have cooked tuna, but I still have no idea how to do it properly.
Nonetheless, it was delicious.
This week I had a work party where food was provided and two work lunches during the week so didn’t cook as much!
