Wholesome finger lickin’ food

This week was full of deliciousness! Some I’ll admit involved a little more effort than usual, but not to say you can’t do something similar with a lot less effort. Check it out!

Asian broccollini with scrambled eggs and avo

Before the week turned out indulgent, I had this for dinner one night. Simple, light, and perfect when I had already had a bit to eat that day.

The seasoning on the broccolini was simply

  • sesame oil

  • ginger garlic paste

  • sesame seeds

  • soy sauce.

Handmade Semolina Pasta with yellow veg and chicken

I guess it all started because I listened to Stanley Tucci’s ‘Taste’ on Audible. It gave me an insight to pasta I had never had before and it got me inspired! Since listening to the book, I have been more adventurous with my sauces and it has been paying off big time! This one, in particular, was just butter, 1/2 tsp mustard - I, unfortunately, didn’t have garlic and used mustard instead to give a bit of a kick, salt, pepper, some of the pasta cooking water and parmesan cheese. mixed it all together, poured it over the beg and the pasta and let the heat do the magic until everything became deliciously glossy and silky. mmmm

The second thing I learned on Tucci’s book is that Italians don’t often mix their protein in with the pasta, so I simply salted and coated this chicken breast in white wine vinegar and thyme then panfried it gently to serve on the side.

Burrito Bowl

This may not look like your standard burrito bowl, but it was so good I had two and still had plenty of leftovers to play around with later to have different meals.

  • roast pumpkin

  • caramelised onion and capsicum

  • spicy tomato salsa

  • brown rice

  • beans

  • what was originally a burger paddy but I decided I didn’t want a burger and wanted this instead so… haha

  • I had the rice and beans with steak and salad

  • I ate the pumpkin ina almost every breakfast for the rest of the week with eggs and toast

The ultimate Veg Breakfast Burger

My experimental bread of the week was ciabatta. This was very fun to try as it’s the ultimate sandwich bread that is not a tin loaf bread with Foccacia, I’d say, as a very close runner-up.

Anyway, I tried to make it, and to be honest, although it was definitely not perfect, it was still delicious and I loved what it led me to make.

The ultimate Veg Breakfast Burger

  • homemade olive oil mayo

  • roast pumpkin

  • caramelised onions

  • panfried tomato on butter

  • 2 fried eggs

  • lettuce

  • golden white top mushrooms also in butter and thyme

  • avocado

  • in between two halves of my delicious ciabatta roll

Pulled Lamb and slaw sandwich

As the final hero to this weeks fingerlickin’ meals, I made this sandwhich.

In the pressure cooker, I added capsicum, garlic, smoked paprika 2 lamb shanks, half an onion and topped it up with water.

Once it was cooked, I pulled the meat off the bone, seasoned with salt and allowed the sauce to almost evaporate leaving behind just the delicious pulled meat.

Between two halves of my ciabatta I put slaw, the lamb and lettuce and once I bit into it I almost did a chefs kiss.
