Summer Salad
This citrusy and light complimentary salad is quick and easy to make and will bring the light to any table! I guarantee everyone will love it!

INGREDIENTS:
1 head of lettuce of your choice, a mix of a couple different varieties is even better!
1 orange
1 grapefruit
1 tbs olive oil
2 tbs balsamic vinegar
1 tsp honey
1/2 tsp salt
1/2 a hand full of parsley
1/4 cup almonds
3 sweet corns
METHOD:
Boil the corns until cooked.
When cooked, drain them and to add more flavour, char them on your gas stove if you have one. If not, no worries, simply just cut the kernels off the cob.
Break the leaves of the salads with your hands into rough shapes. No need to be perfect.
Peel and slice the citrus fruits however you like.
Toast the almonds in a pan until lightly charred. Roughly chop them with the parsley leaves
Combine the oil, vinegar, honey, salt and any juice that came out of the fruits when you were cutting them to make the dressing.
Toss all the ingredients together in a large bowl and dress the salad right before serving so the salad leaves don't go soggy.

CHANGE IT UP!
LETTUCE: You can use any leafy greens here, beet leaves, baby spinach, rocket, kale, sorrel, even radicchio.
VEG: You can or change the corn to steamed baby beets, roast carrots, raw radishes, even broccolini if you like!
CHEESE: adding some fetta, shaved parmesan or any other cheese of your choice also can taste great!
NUTS: Don't have almonds? walnuts, macadamias, hazelnuts, pine nuts or even brazil nuts will taste great and add a delicious crunch!
CITRUS: lemon, blood orange, or even stone fruits such as peaches or nectarines would taste delicious in this salad!
Make this a meal: Add some couscous or quinoa, a couple boiled eggs, chicken, tuna or salmon and you're good to go!
