BBQ VEG or CHICKEN SKEWERS

Having bbq is so much fun! Wether it's at home or at a park, for 2 people or 20, these skewers are delicious and oh so easy to prepare.

These are great for a celebration with friends and family but also a super easy and simple bulk prep lunch for the week.

INGREDIENTS:

Marinade

  • Smoked Paprika

  • Salt

  • Pepper

  • Herbs

  • Olive Oil

  • Lemon Juice

  • Garlic

Options:

Chicken breasts or thighs

Halloumi

Firm tofu

Rump Steak

Vegetables of your choice such as

  • capsicum

  • eggplant

  • zucchini

  • onion

but just think quick cooking vegetables.

METHOD:

Chop your skewer content of choice into relatively large "cubes".

Place all the marinade ingredients in the same bowl and coat the contents well.

Cover the bowl and allow to marinade overnight.

Skewer the content on to wooden skewers and cook them on the barbecue or grill until cooked.

Enjoy with some bread or salad, dips or whatever you else you like!

CHANGE IT UP!

PAPRIKA: you can add other spices instead such as zaatar, or garam masala or simply keep everything else the same and no spices at all!

HERBS: I used parsley this time but any herbs such as basil, rosemary, sage, oregano or coriander will taste delicious!

Lemon Juice: Lemon juice has its own delicious zesty taste, but if you happen not to have any at home you can use Lime juice or white vinegar instead.
