Banana Bread

Banana bread is super easy to make, sugar free, combats waste if you are the kind of person who accidentally overbuys bananas, freezer friendly, is wonderful for breakfast or as a snack and there are so many ways you can change it up and modify to make ot slightly different every time.

Make a couple of these in loaf or bundt form to stock up your freezer for any luchboxes you will very soon start having to make again.

180g flour (60-40 wholemeal to white)
6 bananas
2 eggs
1 apple
3 tbs butter
cinnamon
1tsp bicarb
1tsp baking powder

Change it up!

Add
- oats
- choc chips
- blueberries
- banana sliced in half on top
- more nuts
- 1 scoop of protein powder
- 1-2tbs nut butter or tahini

Swap out:
Some of the wheat flour for buckwheat, spelt, or almond for a some different flavours and textures. - Have fun!
- When doing this still keep min 100g wheat flour.

Mash the bananas then add the butter and eggs. Add the grated apple, then sift in all the dry ingredients.

Place in a loaf or Bundt tin of choice. Decorate with nuts or banana then bake at 200C for 40-50 minutes.

Allow it to cool before slicing then you can slice fully and wrap in baking paper before freezing for ready to go snacks to make life a little easier!
Pull it out of the freezer the night before eating and it will be perfect by the morning.
If you forgot to remove from the freezer, putting in for a few seconds in the microwave or pan frying it will also do the trick.
