Chimichurri

Traditionally an Argentinian condiment, this has got to become one of your new go to condiments! I’m obsessed, that’s enough for you to simply just give it a try. It stores really well so do not be afraid to make it in a slightly bigger batch.

Ingredients
1/2 tsp dried chilli
5 tsp oregano
1/2 bunch chopped parsley
2tbs wine vinegar
2tbs warm water
1 tsp salt
Olive oil as needed
5 cloves of garlic fried or raw

Optional: other dried herbs of choice

Make this in bulk and store in your pantry.

As long as all the ingredients are submerged in oil it should keep for a while.

If choosing to fry the garlic, do this first. Otherwise, simply crush it and add it to the other ingredients raw.
Mix all ingredients in a bowl, then place in a jar and top up with more oil if needed to ensure all ingredients are submerged.

Enjoy on top of meat, dips, on sandwiches, salads, roast veg or even popcorn.
