I love learning new recipes during my travels and this is one of them Iām super happy to share with you š
Intense and hot bring a little bit of South-East Asia to your or a friends home with this.
Ingredients
handfull of birdseye chillies
1 purple onion
2 garlic cloves
1 tsp salt
3tbs sugar
1handfull peanuts
1/4 cup oil
1 handfull dried anchovies
Using a food processor or blender, blend the chillies, onion, garlic, salt and tomatoes together.
In a wok or pan, fry the peanuts until golden. Remove from t he pan and set aside.
Fry the anchovies if using now then add the chilli paste after 1 minute. Cook the paste until fragrant (5-10 minutes) then add the sugar and cook once again until caramelised in texture and dark red in colour
Add the peanuts in and enjoy fresh or store in a jar in the fridge until ready to consume.
