Dough for Brazilian 'Salgados'
As much as I want to translate ‘salgado’, there simply isn't a word for it in English.
In Brazil we have a whole category of snack foods called Salgado, they can be fried such as the Coxinha I posted recently or baked and more bready. They can be filled with a variety of different things from tomato and oregano, to ham and cheese and even chicken or sausages so I thought I'd give you the dough and let you decide what filling you would like to put in yours.
I would treat salgados the same way you treat a pie and Aussie meat pie. They are small enough to be a snack but also big enough to potentially be a meal.
Now it's up to you. What will you fill your salgado dough with?
Ingredients
450g white flour
1 instant yeast sachet
1 tsp brown sugar
1 Tbls Soft butter
1 egg
100ml water
150ml milk
2 pinches of salt
Method
Mix all together in a bowl; once together, transfer to a bench and knead until smooth.
Let the dough rest for about 1 hour.
Roll it out and fill it with whatever you like! Some traditional fillings are
ham and cheese
tomato, onion, cheese and oregano
chicken
sausages
spinach and mushroom
Note: You can leave them large and cut to share once already cooked or make individual parcels.
With the ham and cheese, it was easy to make one long one and cut into individual ones before baking, but with other more loose fillings, I found making individual ones was easier.
Let them double in size again; this might take 1-2 hours.
Bake at 210C until golden and the cheese melted.
