Carne Louca - Crazy (good) Meat

This is a delicious mouth-watering pulled beef dish that, although traditionally eaten in a sandwich, can be used for so many things!
It requires close to no effort and the stove does the rest for you.

INGREDIENTS

  • 2 Capsicums 

  • 5  large cloves of garlic 

  • 1 large onion 

  • 3 tomatoes 

  • 1.2kg beef skirt 

  • 1/2 Bunch of basil 

  • 1 tsp Smoked Paprika 

  • 2 Tbls Tomato paste 

  • Salt 

METHOD

In a large pot, sear the meat using a little bit of olive oil. 

While the meat is cooking, slice the onion and the capsicum into long strips and crush the garlic. 

Once the beef is golden on all sides, remove from the pot and set aside. 

In the same pot, sweat the onion, capsicum and garlic until soft. Add the salt, paprika and roughly chopped tomatoes, stir and cook for 2 minutes. 

Add the seared beef back into the pot, the tomato paste and cover it all with water. 

Cover with a lid and let it cook on medium heat for 2.5 hours. 

Test to see if the meat can be easily pulled apart using 2 forks. If not, continue to cook with the lid on until it can be. 

Once the meat can be pulled apart, remove the meat from the pot, pull it apart then return the meat to the sauce. 

Add the chopped parsley, adjust the salt if needed and let it cook with the lid off until the sauce reduces and thicken to coat

the meat. 

Once ready, serve in a bread roll, for a delicious get together food! 

Although not traditional, I like to add a little bit of lettuce to my roll for crunch and freshness.

Notes: If you have a pressure cooker, you can cook everything the meat in the pressure cooker until the meat is soft to speed up the process. This shouod only take 1-1.5 hours instead of 2.5-3 on the regular pot. You will still need to cook the sauce down with the lid open to thicken it on the second half. 

Change it up!

  • You may have to order the beef skirt at the your butcher in advance, if you cant find the skirt, brisket will be a good alternative cut of meat but might be a little more fatty and may take slightly longer to cook, none the less, still delicious! 

  • If you want to bulk this up using less meat, you can add beans, spinach or corn to the dish and it will taste delicious! 

  • For the jaffle lovers out there, this would make a killer jaffle filling! 

  • Use it as a pie filling.

  • Make some pasta and this can be a delicious pasta sauce. 

  • Serve it with polenta and some green beans for a delicious tabletop dinner.
