Ricotta and greens open pie

This was absolutely delicious.

  • 1/2 bunch of kale

  • 200g brussels sprouts

  • 1 large zucchini

  • silken tofu

  • ricotta for richness and to bring everything together

  • 4 cloves of garlic

  • salt

Mix everything together, pop it in the oven and you get something delicious on its own, wonderfully accompanied by a salad and perfect for sharing.

Pie Crust:

  • 500g flour of your choice

  • 250g softened butter

  • 1tsp salt

  • 110ml water

Change it up!

Swap outs:

  • pie crust for filo pastry

  • vegetables for other veg
