Falafel
Falafels are a middle eastern vegetarian ‘meatball’ made traditionally from fava beans but popularly made with chickpeas.
It is is easy to make, freezer friendly and perfect for lunchboxes.
Combine it with a variety of sides and your in for a win for a delicious wrap, pita, sandwich, or dip platter.
INGREDIENTS
2 cups dried chickpeas
1/2 bunch parsley with stems
1/2 bunch coriander with stems
1 onion
8 garlic cloves
Salt to taste
1 tbsp ground black pepper
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp cayenne pepper, optional
METHOD
In a food processor, blend all ingredients together until a grainy dough is formed.
To test if it is good, grab a tablespoon worth of mix and press in your hands. If it comes together, it is ready, if it falls apart, keep blending to reach a smoother consistency.
Once you are happy with the consistency, roll the mix into balls.
You can bake in the oven, air-fryer, fry until golden.
Optional: freeze for later consumption. If cooking from frozen, expect it to take slightly longer to cook.
Best eaten freshly baked and warm.
