Pão Frances - Brazilian French Bread
The bread every Brazilian loves and misses when they're far away from home.
Pão Frances
Makes 8 rolls
Ingredients
450g White flour
7g Instant yeast
1 tsp sugar
1 large tsp butter
1tsp salt
300ml tap water
Method
Simply mix everything together until it form a smooth dough, let it rest for 5 minutes then knead it for another 5 minutes to work the dough.
Let it rest until it doubles in size then cut it into even pieces roll it into a thin rectangle then tightly roll it towards you to make a sausage shape almost.
If you would like a longer roll, leave it at that and allow it to double in size again.
If you would like a shorter and more plump roll, once you’ve rolled all the rolls into the thin sausage shape roll it out once again into rectangle and roll it tightly again towards you. This time it will be a shorter and fatter looking roll.
Once they’ve almost doubled in size, make a cut in the middle and allow it to continue growing until it completely doubles in size.
At this point, start preheating the oven to fan forced 230C and place a dish in there with some water to allow the oven to steam up.
Once the bread has doubled in size, place it in the oven and bake until golden brown.
Halfway through, remove the water dish if the water hasnt lready fully evaporated to allow the bread to crust up all over.
Allow it to cool slightly and enjoy!
Unlike sourdough you can have this bread freshly out of the oven! mmmmm
