Hot Sauce

Delicious, fun little gift that will have your gifted friend thinking of you almost every meal 😁

Ingredients
Chillies
2 garlic cloves
salt
vinegar

Optional
ginger
mango
pineapple
capsicum

Chop the chillies and peel 2 cloves of garlic.
Place these in a glass jar and fill with water.
Pour the contents of the jar onto a bowl and weigh. (remember to tare the weight of the bowl out)
Multiply this number by 0.03. This is how much salt you will need.
Add the salt, stir until dissolved and place everything back in the glass jar.
Use something (like a plastic bag filled with rice or a cabbage leaf to weight the chillies down and stay submerged. If not submerged, they could go mouldy.
Ferment the chillies for min 5 days.
Strain the liquid of the chillies out, add 1/4 a cup of vinegar and any additional flavouring you may like such as mango, and blend until smooth. Store in a glass jar in the fridge.

Make a few different flavours and turn it into a little hot sauce kit!
